About 14 Muffins
1 cup All-Purpose Flour
1 cup Yellow Cornmeal
2/3 cup White Sugar
1 tsp Salt
3 ½ tsp Baking Powder
1 Egg
1 cup Milk
1/3 cup Vegetable Oil
3 Slices American Cheese
1) Preheat oven to 375. Line muffin cups.
2) In a large bowl, combine flour, cornmeal, sugar, salt, and baking powder.
3) Stir in the egg, milk, and vegetable oil until well combined.
4) Tear the cheese into ¼ inch squares and stir into the batter.
5) Pour the batter 3/4 of the way to the top of the prepared muffin cups.
6) Bake in the preheated oven for 20 –25 minutes or until a toothpick inserted into the center of a muffins comes out clean. Enjoy!
