Chocolate Chocolate Chip Cookies

Without Butter or Eggs
Makes 2 Dozen

1 cup   Flour
1 tsp   Baking Powder
1/4 tsp   Salt
1/3 cup   Cocoa Powder
1/2 cup   Sugar
1 cup   Semi Sweet Chocolate Chips
1/4 cup   Vegetable Oil
1/2 cup   Applesauce
1 tsp   Vanilla

1)   Preheat oven to 350. Line 2 cookie sheets with parchment paper.
2)   Whisk together the flour, baking powder, salt and cocoa powder; add chocolate chips and stir well.
3)   In a separate bowl, stir together the sugar, oil, applesauce, and vanilla.
4)   Pour the liquid ingredients into the dry ingredients. Stir until just mixed. If batter is too thick, add water a tsp at a time.
5)   Drop cookies by tablespoonfuls on parchment lined cookie sheets.
6)   Bake 8-10 minutes or until slightly soft on top.
7)   Transfer to wire racks to cool completely. Enjoy!

TIP:  Substitute applesauce for butter in dessert recipes by doing a 1:1 swap. Swap 1 cup butter for 1 cup applesauce.
