Tiramisu





This was my first attempt at one of our favorite desserts. It was super easy and turned out great! Instead of the traditional mascarpone, I used cream cheese lighted up with egg whites. 

About 9 Servings (8 x 8 dish)

2 pkgs Cream Cheese, softened
3 Eggs, yolks and whites separated
2/3 cup Sugar
1/2 tsp Vanilla 
2 cups Strong Coffee + splash of Whiskey or Rum
26 Lady Finger Biscuits
1/3 cup Cocoa Powder

1)   Cream the cheese and sugar until light and fluffy with a hand mixer in a large bowl. 
2)   Add the egg yolks one at a time and mix well each time.
3)   Stir in the vanilla.
4)   Clean the mixer beaters to remove all oil. In a medium bowl, beat the egg whites until they reach stiff peaks.
5)   Carefully fold 1/4 of the egg whites into the cheese mixture. Add the remaining egg whites into the cheese mixture and gently fold together. Do not over mix.
6)   Dip the lady fingers in the coffee mixture and line the base of an 8 x 8 in dish. Then add a layer of the cheese mixture. Continue with another layer of coffee dipped lady fingers and layer it again with the cheese mixture. You should end with a layer of cheese mixture on the top.
7)   Dust with the cocoa powder and let set in the fridge for at least 6 hours or overnight before serving. Serve and enjoy! 

TIP: It is important that the Tiramisu sits for at least 6 hours or you risk it falling apart when serving.
