Baked Avocado Fries



4 Servings

2 Firm Avocados 
1/4 cup Flour
1 1/4 cup Panko Bread Crumbs
1 Egg, beaten + 1 tbsp Water
Salt and Pepper

1)   Put flour, panko, and egg in three separate bowls.
2)   Preheat oven to 450. Line a baking sheet with foil. Place a cooling rack on the prepared cookie sheet. 
3)   Peel, pit, and slice the avocados into 1/2 inch wedges. 
4)   Salt and pepper the wedges. Coat the avocado in the flour, then egg, and then panko. 
5)   Place the wedges on the cooling rack and spray lightly with cooking spray. Bake for 20 minutes, turning once during cooking, until lightly golden. Enjoy!
