Shrimp & Zucchini Pasta


About 3 Servings

8 oz can   Tomato Sauce
2 tsp + 1 tbsp   EVOO
1/4 cup   Basil, chopped
2   Garlic Cloves, minced
1/4 tsp   Salt
1/4 tsp   Pepper
Pinch of Cayenne Pepper, or to taste
1 lb   Medium Raw Shrimp, peeled and deveined
2 cups   Rotini 
1   Large Zucchini, quartered lengthwise and cut into 1/4 inch slices

1)   Mix the tomato sauce, basil, 2 tsp EVOO, garlic, salt, pepper, and cayenne in a medium bowl. Stir in shrimp and let stand for at least 10 minutes.
2)   Meanwhile, cook pasta according to package directions. Drain.
3)   Heat the remaining 1 tbsp EVOO in a large skillet over medium high heat. Add the shrimp mixture and the zucchini. Cook until the shrimp are pink and just cooked through, about 3 to 4 minutes. 
4)   Stir in the pasta and cook until heated through, about 2 minutes. Serve and enjoy!
